Fortnightly Feed: ZUCCA FRITTA ALLA SICILIANA – Sicilian Fried Pumpkin
Summer is over and suddenly Autumn is here. Today’s fortnightly feed draws from the new season’s pumpkin. Pumpkin is a very popular side dish in Italy and this recipe, translated from an old recipe book Il Talismano della Felicità, is simple, quick and easy to make this weekend.
ZUCCA FRITTA ALLA SICILIANA from ‘Il Talismano della Felicità’ by Ada Boni
Sicilian Fried Pumpkin
For 6 people: 1 kg yellow pumpkin, vinegar, sugar, a few mint leaves, oil, salt,
Optional: 2 cloves of garlic
Peel the pumpkin, remove the seeds and cut it into regular slices, resembling playing cards, which you will fry in the pan with oil without flouring the slices first.
When the pumpkin is cooked, drain away almost all the oil and leave just a little bit of it in the pan. Put the pan back on the heat and sprinkle with a little vinegar. Add salt, a pinch of sugar and some chopped mint and leave the pumpkin to infuse with the flavours in the pan.
Optional: A little chopped garlic may be added to this dish.
