Fortnightly feed: Cold comfort food for hot weather.
With the return of the hot weather, here is some cold comfort food! Have you tried putting some fennel in a salad? This is a simple summer salad, with a lovely scent and packed with flavour. It’s pretty to look at too!
Insalata di finocchio e olive (Fennel salad with olives)
2 fennel heads
Salted black, pitted olives
Salt and pepper to taste
Wash and cut the fennel heads in half. Thinly slice and put in a bowl.
Add the salted black olives to the bowl.
Cut the peel from the oranges, removing the outer pith and skin.
Slice into round rings and then cut into smaller pieces.
Put the orange pieces and juice in the bowl with the fennel and olives.
Drizzle some olive oil over the salad.
Add freshly ground black pepper and mix it together.
